Easy Guacamole

This easy Guacamole is hands down one of my favourite dips. It is so simple, creamy, garlicky, slightly acidic, and goes insanely well with tortilla chips, pretzels, on sandwiches, on top of enchiladas, inside of a burrito… I could go on. But, in my world it has to be fresh Guacamole. None of that from a container at the store stuff. Sure it works in a pinch, but it just doesn’t taste the same!

Avocado Dip

Guacamole is so quick to make and is so simple that its almost ridiculous to call this a recipe.   Four ingredients, smashed together in a bowl… hardly a recipe. But still, I want to share this with you because the world needs more Guacamole! I love that this is super customizable too – add in some fresh chopped tomatoes, finely diced cilantro, or pickled jalapenos, maybe a scoop of Pico de Gallo or some diced mango for a fun fruity spin –really the sky is the limit with what you can add to smashed avocados.

Now, a disclaimer for the purest out there: I’m aware that authentic guacamole uses limes instead of lemons — Feel free to use limes in yours if you want! But, when I first started making this about 10 years ago, I never seemed to have limes on hand. I do however always have lemons, so I just used those and it just kind of stuck! Now I actually prefer Guacamole with lemon juice, I find limes to be hit and miss in terms of acidity, and sometimes are just so stingy on juice that I can’t be bothered.

Easy Guacamole

  • Servings: 4

Ingredients

  • 2 ripe avocados
  • 2 garlic cloves, minced
  • Juice of 1/2 lemon (add more or less to taste)
  • 1/4 tsp Salt
  • If desired, additional mix-ins such as chopped pickled jalapeno, diced fresh mango, a scoop of pico de gallo, minced cilantro etc.

Method

  1. Remove the pit of your avocado and scoop out the avocado flesh into a bowl
  2. Add the minced garlic, juice of 1/2 a lemon and salt
  3. Mash with a fork until it reaches the desired consistency. I like mine with a little bit of chunky bits.
  4. If adding in any additional mix-ins, add them now and stir to combine.
  5. Serve immediately with chips or veggies. If making ahead, press parchment or plastic wrap directly on top of the mixture to prevent browning.
